- 2 zucchini
- 3 eggs
- 1 cup flour
- oil to fry
- salt
- black pepper
Directions:
- Wash and cut zucchini into very thin slices. Put zucchini in a bowl, sprinkle little salt and set aside for a few minutes.
- In another bowl crack the eggs and beat with pinch of salt and pepper.
- Place flour in a plate. Squeeze zucchini slices with your palms, pass through flour then through beaten egg.
- Heat oil in non-stick pan. Fry zucchini slices on medium low heat till they turn golden.
