Zucchini Fry

Ingredients:
Directions:
  • Wash and cut zucchini into very thin slices. Put zucchini in a bowl, sprinkle little salt and set aside for a few minutes.
  • In another bowl crack the eggs and beat with pinch of salt and pepper.
  • Place flour in a plate. Squeeze zucchini slices with your palms, pass through flour then through beaten egg.
  • Heat oil in non-stick pan. Fry zucchini slices on medium low heat till they turn golden.
